NOSE: Honeyed pear, red apple with touches of white strawberry
and floral notes.
PALATE: A crisp and textural style Pinot Gris, exhibiting a creamy
fusion of honeyed pear fruits, gala red apple and white strawberry,
with a firm, dry palate from light skin contact pre-crush and
extended time on lees.
The pink skin from this varietal gives this wine a natural rosey hue.
For added complexity, 10% of the fruit for this wine was fermented
100% wild, with the remainder fermented using a particular yeast
strain to accentuate floral and mineral tones. Following ferment,
the wine was racked and briefly aged over light lees in stainless
steel. Minimal fining only to retain maximum flavour and the pretty
natural pink colour of the grape.
FOOD MATCH SUGGESTION:
This intense aromatic style is best drunk young. Try with
caramalised char-grilled scallops in a Thai-style salad.
